M & M Soft or Crunchy Biscuits

The great debate: Chewy or Crunchy? Well, in our family we are unashamedly of the chewy favorability. So which one are you? Let me know!

INGREDIENTS:

2/3 cup Butter (185g) softened to room temperature

1/2 cup Caster Sugar

1/2 cup Brown Sugar

1 cup M & M’s or Chocolate Chips (I’ve done triple choc with white, dark and milk before)

1 Egg

1 teaspoon vanilla extract

1 1/2 cups Plain Flour

1/2 teaspoon Baking Soda

1/2 teaspoon Salt

1/2 cup chopped Nuts (Macadamia and white choc is another great combo) - Optional

METHOD:

1.      Preheat oven to 160 degrees C fan forced, 180 degrees normal.

2.      Mix butter, sugars, egg and vanilla with beaters thoroughly.

3.      Stir in dry ingredients.

4.      Mix in M & M’s or whatever you’re using with a round-nosed knife or spatula.

5.      Scoop teaspoons of the dough 5cm apart on non-stick baking paper on baking trays. If it’s a hot day, you can do this and then put the trays in the fridge to firm up before cooking. this will stop the butter from spreading when cooking.

6.      Bake 8-10 mins. Sometimes mine can take up to 12ish minutes. Leave longer if you’d like them crunchy.

7. Say Mmmmm mmmm as you eat them. Enjoy xo
