Bounty Bars!

Do you love coconut and chocolate? Well then. Is this the recipe for you! I’ve always loved the Bounty Bars that you buy from the confectionary section of the supermarket. But only getting two! My head is definitely shaking right now, hehe. So when I saw this recipe, I was full of hopeful anticipation and I wasn’t disappointed!

INGREDIENTS:

1 1/2 cups Desiccated Coconut

1/2 tin Condensed Milk (I used the Condensed Coconut Milk above - yes it really is a thing), and such a great find in the Asian section of the supermarket!

175g Chocolate of your choice. I used Aldi’s ‘Finest Dark Sea Salt’ and it’s delicious.

1 Tbsp olive oil (next time I make them…and I will, SOON, I’ll lesson the oil to half a Tbsp to hopefully give the chocolate a little more crunch.

METHOD:

Mix the coconut and condensed milk together to get a firm consistency. Scoop a spoon full and shape into a log of whatever size you like. I made mine about 5cm long (theory: they’d last longer…think my theory was misplaced!)

Place on a tray with baking paper and rest in the fridge to firm up for approximately one hour.

Melt the chocolate and oil (I did this in the microwave on a gentle heat). Coat and reset in the fridge.

Eat to your hearts content and enjoy. xo
