Easy-Peasy Gnocchi
Who doesn’t love an easy-peasy recipe? I promise you, this one is just that and super yummy to boot!
INGREDIENTS:
1 cup OO or bread/pasta flour (OR Gluten free flour - it worked for me. I used Bakers Bread flour by ‘Wallaby’).
1 cup Water
Your choice of sauce or meat dish to accompany the gnocchi - prepared before you make the gnocchi.
METHOD:
Place a large pot onto the stove top and let boil, adding a good pinch of salt to keep the water boiling.
Place flour and water in an appropriate sized pot and slowly cook on stove top on medium heat. Stir constantly. It will appear gluggy to begin with before it gently thickens. Ignore the lumps that look like they are forming. They disappear as it cooks.
When the mixture is holding together like playdough, turn it out onto a floured board and coat in flour.
Cut into four sections and roll each one into an elongated length, cutting into small pieces when you are happy with the thickness. Set aside on a lightly floured board. Continue to cut the rest. *At this stage, you’ll want to put the gnocchi straight into the water to cook, so work out your timing before hand. We’ve made the gnocchi before the sauce in the past and the results are not as good.
With the water rapidly boiling, place the gnocchi into it and cook until 2/3 of the gnocchi are dancing on the surface of the water. Set a timer for 1 minute precisely and cook.
Remove immediately and add to your choice of pasta sauce, ragu or anything you love to eat gnocchi with.
