Scrumptious Brownie Cookies with Peanut Butter Ganache
If your family loves chocolate and peanut butter, then they’ll be fending one another off to get to one or three of these! They are totally morish and completely decadent, especially if you use dark chocolate. I’ve used milk chocolate also and they are also truly delicious.
INGREDIENTS:
350g Dark Chocolate, chopped
40g Butter
2 Eggs
2/3 cup (150g) Caster Sugar
1 teaspoon vanilla extract
1/4 cup (35g) Plain Flour, sifted
1/4 teaspoon Baking Powder, sifted
Pinch of Salt Flakes
PEANUT BUTTER GANACHE:
1 cup (160g) icing sugar mixture
1 cup (280g) smooth peanut butter (it’s nicer for the decadent texture but let me know how crunchy goes if you try it)
80g Butter
1 teaspoon vanilla extract
1/3 cup (80ml) single cream
METHOD:
1. Preheat oven to 180 degrees C. Combine 200g of the dark chocolate with the butter and melt (I use the microwave, doing it slowly). Set aside to cool a little.
2. Whisk the eggs, sugar and vanilla together for 15 minutes until pale in colour and creamy. Stir in the flour, baking powder, chocolate mixture and remaining chocolate and set aside to rest for 10 minutes.
3. Spoon tablespoons of the mixture onto trays lined with non-stick baking paper. Sprinkle a pinch of salt flakes on top of each biscuit and cook for 8-10 minutes (keep an eye on them) until they puff and crackle on the top. Allow to cool completely on the trays.
4. To make the GANACHE: mix the sugar, peanut butter, butter and vanilla until light and fluffy. Add the cream and beat for 2 minutes.
5. Pair up the biscuits to match in size and spread the ganache on one of the two biscuits. Sandwich them together.
