GF /DF Egg, Cheese and Bacon Pie
This recipe really is a slap-dash one (which I love). You can add whatever you like to it and it still works. Win win!!
INGREDIENTS:
x3 Eggs
1 small Onion, finely chopped
Splash of olive oil for cooking
150g Bacon
A good handful of spinach
4-5 cherry tomatoes, chopped
1 cup Tasty Cheese / Lactose free / Vegan cheese, grated.
1/4 cup Milk / Almond Milk
300ml Cream / Lactose free Cream
Chives, chopped
Salt and Pepper
1 sheet puff pastry to fit tin, thawed, OR one portion of Luke’s Golden Pastry
Cook with Luke: GOLDEN PASTRY
200 g (2 cups) MCKENZIE’S Almond Flour
3 tablespoons melted coconut oil or butter
2 eggs, whisked
1 teaspoon MCKENZIE’S gluten-free baking powder
1 tablespoon sesame seeds
METHOD:
Preheat oven to 200 degrees C.
1. Remove sheet/s of puff pastry from freezer to thaw. And/or make Luke’s golden pastry. It only makes a small amount so if you are feeding a family, I’d double the mix. Also, it needs to go in the fridge for at least 20 - 30 minutes (I left it longer and it wasn’t a problem).
Make Luke’s pastry: For the golden pastry, combine the almond flour, coconut oil or butter, whisked egg and baking powder in a bowl and mix well to form a sticky, wet dough. You should be able to roll it so it holds its form without cracking or breaking apart. If it’s too dry, add a little more melted butter; if it’s too wet, add a little more almond meal. Roll into 4 evenly sized balls, cover with plastic wrap and chill in the fridge for 20-30 minutes while you get started on the filling.
2. Cook bacon and onion in frypan. Set aside.
3. Chop tomatoes and chives; grate cheese.
4. Mix eggs, cream and milk. Add Pepper.
5. Grease tray and place pastry inside. Luke’s pastry: Remove a dough ball from the fridge and place it on a sheet of baking paper. Cover with another sheet of baking paper and roll out the dough to form a 10 cm × 15 cm rectangle about 5 mm thick. Lay bacon, onion and tomatoes on the base of the pastry and half of the cheese, pour over egg mix and spread remainder of the cheese on top and grind extra pepper if desired.
6. Cook for at least 30 minutes or until golden.
